Wine CO₂ adjustment
If you want to increase the carbon dioxide content in a wine, Air Liquide's solution is to inject a small amount of gas-phase carbon dioxide into the wine.
If, on the contrary, you wish to reduce this content, all you have to do is inject nitrogen, which eliminates any excess carbon dioxide present in the wine before degassing.
